Step 1
In a large bowl, combine 3 cups whole wheat flour and 1 teaspoon salt. Dissolve 1 teaspoon active dry yeast in 1 1/2 cups warm water. Let it sit for about 5 minutes until frothy.
Step 2
Gradually add the yeast mixture to the flour mixture, stirring until a dough forms. Knead the dough for about 10 minutes until it's smooth and elastic.
Step 3
Cover the bowl with a damp cloth and let the dough rise in a warm place for 1 hour until it doubles in size. Preheat a baking stone or heavy baking sheet in an oven at 500°F (260°C).
Step 4
Divide the dough into four pieces and roll each piece into a thin oval shape. Sprinkle the tops with 2 tablespoons sesame seeds if desired.
Step 5
Bake for 5-7 minutes until golden brown and crisp.
Step 6
Remove from the oven and let cool slightly before serving.
