Step 1
Prepare all your ingredients by slicing shrimp, julienning vegetables, and cooking vermicelli noodles according to package instructions.

Fill a large bowl with warm water. Submerge one rice paper wrapper at a time for about 15-20 seconds until soft but still slightly firm.
Step 3
Lay the softened wrapper flat on a clean surface. Place 2 shrimp halves in the center, then add a small amount of vermicelli noodles, carrots, cucumber, and herbs.
Step 4
Fold the sides of the wrapper inwards, then roll it tightly from bottom to top to enclose the filling.
Step 5
Repeat with remaining wrappers and ingredients.
