Plum Ketchup

Step 1
In a medium saucepan, heat the olive oil over medium heat. Add the plums and cook for 5 minutes, stirring occasionally, until they start to soften.

Stir in the apple cider vinegar, brown sugar, ginger, cinnamon, salt, allspice, and cayenne pepper. Bring the mixture to a boil, then reduce the heat to low and let it simmer for 15 minutes.
Step 3
Remove the saucepan from heat and let the mixture cool slightly. Transfer the mixture to a blender and blend until smooth. Taste and adjust seasoning if necessary.
Step 4
Pour the plum ketchup into a sterilized jar and let it cool completely before sealing.
