Mustard-Herb Rubbed Prime Rib Roast

Step 1
In small bowl, stir garlic, rosemary, thyme, mustard, oil, salt and pepper; rub over beef. Cover beef with plastic wrap; refrigerate at least 2 hours or overnight.
Step 2
Place roast, fat side up, in roasting pan; let stand 30 minutes.
Step 3
Preheat oven to 325°. Roast beef 2 to 2½ hours or until internal temperature reaches 135° for medium-rare.
Step 4
Transfer beef to cutting board; loosely tent with aluminum foil and let stand 15 minutes. (Internal temperature will rise to 145° upon standing.)
