Mango Elote Corn Salad

Let's make it

Step 1
Preheat a grill or grill pan over medium heat. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.

Remove the corn from the grill and let it cool slightly. Then, cut the kernels off the cob and place them in a large bowl.

Add the diced mango, chopped cilantro, crumbled cotija cheese, diced red onion, and minced jalapeño to the bowl with the corn.

In a small bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper. Pour the dressing over the corn mixture and toss to combine

Adjust seasoning with salt and pepper if needed. Serve immediately or chill in the refrigerator for 30 minutes before serving for a cooler salad.
