Once boiling, reduce the heat to low and cover the saucepan. Let it simmer for about 45 minutes, or until the rice is tender and the mixture is creamy, stirring occasionally.

If using, stir in the cinnamon during the last 5 minutes of cooking.
Step 5
Remove from heat and let it sit for a few minutes before serving.
Step 6
Serve warm or chilled, garnished with shredded coconut and sliced almonds if desired.
