Crispy Gnocchi Caprese

Step 1
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the gnocchi and sauté for about 5-7 minutes until they are golden and crispy on the outside.

Remove the gnocchi from the skillet and set aside. In the same skillet, add another 1 tablespoon of olive oil.
Step 3
Add the cherry tomatoes to the skillet and cook for about 3-4 minutes until they start to soften.
Step 4
Return the crispy gnocchi to the skillet and toss together with the tomatoes.
Step 5
Add the mozzarella balls and basil leaves. Stir gently until the mozzarella starts to melt slightly.
Step 6
Drizzle with balsamic glaze and season with salt and pepper to taste before serving.
