Cold Rice Noodle Salad

Step 1
Cook the rice noodles according to package instructions. Drain and rinse under cold water. Set aside.

In a large bowl, combine the soy sauce, lime juice, sesame oil, honey, and minced garlic. Stir well to make the dressing. Add the cooked rice noodles to the bowl with the dressing and toss to coat evenly.
Step 3
Add the shredded carrots, sliced cucumbers, chopped cilantro, and green onions to the noodles. Toss everything together until well combined.
Step 4
Sprinkle the chopped peanuts and chili flakes over the salad. Toss lightly to mix. Taste and adjust seasoning with salt if necessary. Serve the salad chilled or at room temperature.
