Step 1
Cook the Noodles: In a medium pot, bring 2 cups of water to a boil. Add the buldak ramen noodles and cook until just soft, about 3-4 minutes. Drain, reserving a small amount of the noodle water.

Sauté the Vegetables: While the noodles are cooking, heat the vegetable oil in a large skillet over medium-high heat. Add the sliced onion and minced garlic, and sauté for about 1-2 minutes until fragrant. Then add the zucchini, carrot, and shredded cabbage. Stir-fry for 3-4 minutes until the vegetables begin to soften.
Step 3
Combine Noodles and Sauce: Add the cooked noodles to the skillet with the vegetables. Pour in the flavoring packet from the buldak ramen (or adjust according to taste since it can be spicy) along with the soy sauce and sesame oil. Toss well to ensure everything is evenly coated. If the mixture seems dry, add a little of the reserved noodle water.

Optional Egg Topping: In a separate pan, fry the egg to your liking (sunny side up or over-easy) and place it on top of the noodle stir-fry for extra protein and richness.
Step 5
Finish and Garnish: Remove from heat. Garnish with chopped green onion and a sprinkle of sesame seeds before serving.
