Beef Tenderloin with Garlic-Parmesan Caramelized Onions & Gravy

Step 1
Preheat oven to 375°. In large skillet, melt butter over medium-low heat. Add onions and 2 tablespoons water; cover and cook 10 minutes, stirring occasionally. Uncover; cook 10 minutes or until very soft, stirring occasionally. Add sugar; cook 10 minutes or until golden brown, stirring occasionally. Makes about 1¼ cups.
Step 2
Sprinkle beef with salt and pepper. In separate large skillet, heat oil over medium-high heat; add beef and sear 1 minute on each side or until outside is browned. Place beef on rimmed baking pan; roast 25 minutes or until internal temperature reaches 135° for medium-rare. Transfer beef to cutting board; tent with aluminum foil and let stand 10 minutes. (Internal temperature will rise to 145° upon standing.)
Step 3
Prepare gravy mix as label directs. Makes about 2 cups.
Step 4
Serve beef topped with butter, if desired, along with onions and gravy.
