Prepare outdoor grill for direct grilling over medium-high heat. In medium bowl, whisk glaze, oil and honey; add peach and thyme and toss. Makes about 1 cup.
Place bratwurst on hot grill rack; cover and cook 15 minutes or until internal temperature reaches 160°, turning once. During last minute of cooking, place buns, cut side down, on hot grill rack; cover and cook 1 minute or until lightly toasted.
Serve bratwurst in buns topped with peach mixture sprinkled with cheese.
