7 vine ripe tomatoes
1 red onion
1 bunch cilantro, stems removed 2 cloves garlic
1⁄2 cup hatch peppers
1 tsp. smoked paprika 1 tsp. salt
1 tsp. black pepper Juice of 3 limes
2 avocados, diced
Cut vegetables into medium size chunks. First, place onion into food processor. Do not blend yet.Next, add tomatoes, garlic, hatch peppers and all seasonings to food processor and then pulse. The onions should start chopping first and start to pull the other ingredients down. Once the tomatoes start to blend add the cilantro and lime juice. Pulse until a chunky consistency is achieved. Do not over-blend or salsa will be watery. If the processor is not big enough to fit all the ingredients, blend in multiple batches. Pour the salsa into bowl and stir in diced avocado
