
Guacamole with Cotija Cheese
- 6 Hass Avocados, halved and pitted
- 1 T. Fresh Lime Juice
- 1/2 tsp. Salt
- 1/2 tsp. Cumin
- 1/4 tsp. Cayenne Pepper
- 1/2 cup. Onion, finely diced
- 2 ea. Roma Tomato, seeded and diced
- 1 ea. Garlic Clove, minced
- 1 T. Fresh Cilantro, chopped
- 1/2 ea. Jalapeño pepper, minced
- 1/4 cup. Shelled Pepitas (pumpkin seeds), toasted
- 1/4 cup. Cojita or Colby Jack Cheese, crumbled
- Place the avocado pulp and lime juice in a large mixing bowl and toss to combine.
- Add the salt, cumin and cayenne.
- Then, mash using a potato masher.
- Add the onions, tomatoes, garlic, cilantro and Jalapeño, and stir to combine.
- Place guacamole in a serving bowl and top with toasted pepitas and cheese.
- Serve as desired, with chips, tortillas, etc.
