Seafood for Stir-Frying:
Cubes or strips of any firm fish (Amberjack, Flounder)
Wok or skillet
Prep and serving platters
Slice well-chilled seafood into even sized pieces. Coat with water and cornstarch.
Drizzle oil around sides of pan. Then tilt pan to distribute evenly.
Heat oil in pan on high until oil faintly smokes.
Add seafood and any seasonings.
Stir and toss, keep things moving until cooked through.
Stir in sauce and any other ingredients and heat for approximately 30 seconds.
