Seafood Types

Seafood for Grilling:

  • Amberjack
  • Croaker
  • Shrimp
  • Kingclip
  • Mullet
  • Swordfish
  • Tilapia
  • Tuna
  • Salmon
  • Kingfish
  • Sea bass


  • Metal grill brush
  • Grill grates
  • Non-stick grill foil (per recipe)
  • Meat thermometer
  • Slotted spatula
  • Basting brush
  • Knife
  • Prep and serving platters


  1. Preheat grill on high for 10 minutes. Measure and prepare all ingredients. Lightly coat each side of your seafood with cooking oil. Lightly brush your grill grate with oil.
  2. Grill seafood for 1-3 minutes, until it has changed color about 1/4 of way up from bottom. Turnover, baste (brush with basting oil) and then sear for 1-3 minutes.
  3. Check internal temperature by inserting thermometer into thickest part of seafood. Cook until internal temperature reaches 130°.
  4. After placing seafood on a clean platter, let rest at least 2 minutes.
